Ingredients

    15 oz can black beans rinsed and drained
    1 cup pitted dates
    1/2 cup unsweetened apple sauce
    1/4 cup smart balance veg oil
    2 tsp instant coffee
    1/2 tsp baking powder
    1/2 tsp salt
    1/4 tsp pure vanilla extract
    1 large egg
    2 tbsp stevia
    2 cups of Vi-Shape
    1/2 cup unsweetened cocoa powder
    1 cup cooked quinoa
    1/2 cup chopped walnuts
    1/2 cup mini dark chocolate chips

Tips

These are lactose free, gluten free and very yummy. The variations are unlimited, add more or less Vi-Shape mix for more protein. I divided the batter and added dried cherries to half of them for a little variety!


Directions

preheat oven to 350 degrees

combine dates, oil, and applesauce in a bowl and heat in microwave for a few minutes. Remove from microwave and blend in food processor until smooth. Add black beans, instant coffee, b powder, vanilla extract, egg, salt and stevia until well blended. Scrape walls of blender, add Vi-Shape and cocoa powder. Pulse until blended. Scrape mixture into bowl and fold in chocolate chips, cooked quinoa and walnuts.
Grease muffin tins and spoon in batter, place in center of oven and bake 350 for 15 minutes. Careful not to over bake - they will firm up once cool, and do not rise very much.

Serving Size: makes 16 individual servings
