Introduction

Number of Servings: 24

Ingredients

    1 cup whole wheat flour
    1 cup white flour
    1 cup stevia sugar blend
    1 can pumpkin
    1/2 cup canola oil
    1/2 cup unsweetened apple sauce
    2 whole eggs
    2 egg whites
    2/3 cup water
    2 teaspoons baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon cloves

Tips

I baked mine until a toothpick came out with just a little batter still sticking to it, then I let them "rest" for another 5 to finish up cooking. Be careful not to over cook or they will dry out.

Add any spices that you like or have on hand. Nutmeg, pumpkin pie spice, etc... Would be good too.


Directions

Preheat oven to 350
Line muffin tin with liners or spray with cooking spray
stir all ingredients until just incorporated
Pour into muffin tins
Bake about 25 minutes
