Ingredients

3/4 cup Greek yogurt
3 tsp Dijon mustard
1 TBSP Honey
1/4 cup apple cider vinegar
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne
4 cups finely chopped cabbage (about 2 small heads of cabbage)
2 medium sized carrots, peeled and shredded
2 grated Granny Smith apples
Tips
Vary the texture of the salad by grating the carrot with the small side of the grater and the apple with the large side.
Chilling the salad is just a bonus- it tastes great just out of the bowl.
Adding additional honey makes this salad less tart,
but will change the calorie content.
Directions
Combine first 8 ingredients in a bowl, stirring to distribute.
Combine the cabbage, carrots, and apple in a large bowl. Stir in the sauce mixture, tossing to combine.
Chill for 30 minutes to allow the flavors to blend.
Serving Size: Makes 5 cups of salad and 4 large meal sized salads.
