Ingredients

    1 egg plant (unpeeled, sliced in to 12 slices)
    1/2 cup panko bread crumbs
    1/2 cup egg beaters
    3/4 cup flour
    1/3 cup parmesan
    1/3 - 2 tsp italian seasoning (your preference)
    canola oil cooking spray (spray cookie sheet)

Tips

12 servings = 2 slices per serving


Directions

Pre heat oven to 425 degrees, spray cookie sheet with cooking spray. Prepare egg plant slices in flour, then egg beaters, then panko, and place on greased cookie sheet. Bake for 12 minutes, then flip egg plant and cook another 12 minutes or until golden brown.
