Ingredients

100g butter
2 meduim eggs, beaten
100g self-raising white flour (or 100g plain flour and 1 tspn baking powder)
100g castor sugar (this is a smaller grain size suger than granulated used just for baking in the UK - no idea if you can get it in the US!)
Directions
Makes 16 cupcakes - I cake = 1 serving
1) Heat oven to 190C/375F/gas mark 5
and put 16 paper cases into a bun-tray (basically a shallow muffin tray)
2) Cream the butter and sugar together until pale and fluffy.
3) Gratually beat in the eggs, beating well after each addition.* Fold in the flour in gentley.
4) Half fill each case with mixture, then bake for 15-20 min.
5) Transfer to a wire rack to cool.
* you can flavour these in a number of ways:
1) replace 1 tbsp flour with 1 tbsp cocoa powder and a tspn ground cinnamon
2) add a tspn vannilla extract
3) add the finely grated rind of one orange or one lemon
4) you could mix in 50g dried fruit (eg sultanas/blueberries) or 50g of chocolate chips - both these options add calories though!!
