Introduction

For someone looking for a healthier alternative to regular pancakes. They're surprisingly moist on the inside, low calorie, filling, and very yummy! I like my pancakes with jelly on them but for a healthy alternative to jelly, I made homemade strawberry puree by simply putting 1/2-1 cup of strawberries in a blender. Ingredients

    1 cup almond milk
    3/4 cup oatmeal (uncooked regular oats)
    3/4 cup oatmeal flour (blend oatmeal in blender until flour-like)
    1 tsp baking powder
    1/4 tsp salt
    4 large egg whites
    1/2 tsp cinnamon
    1 tsp vanilla extract

Directions

Heat 1 cup of the almond milk for about 90 seconds in the microwave and add the oatmeal and vanilla. Set aside. Beat egg whites into a stiff foam with hand mixer or blender. Mix remaining dry ingredients together and combine with milk/oatmeal mixture. Fold in egg whites until mixture is well blender. If you find your batter is too thick add almond milk or water. Use a 1/4 measuring cup for each pancake. Cook each side until golden brown.

Serving Size: makes 5 pancakes using a 1/4 cup of batter
