    1 1/2c. Fresh Spinach
    2 oz. Feta Cheese
    2 c. Quinoa cooked
    2 T. Rice Vinegar (Nakano)
    1 1/2 tsp
    1/2 Lemon Pepper
    Black Pepper freshly ground to taste
    1 T. Parmasen Cheese

    4 peppers, top cut off and cored
    Cook whole
    Cut into half servings
