Ingredients

    Filling:
    2 Blocks of Organic Tofu Firm or Extra Firm
    2 T Vanilla Extract
    1 t Salt
    1/4 C Pineapple Juice
    1/2 C Honey
    1/2 C Unsweetened Apple Sauce
    1/2 t Lemon Extract
    1/2 t Coriander
    1/8 t Almond Extract
    Crust:
    3 1/4 C Oats
    3/4 C Nuts like whole almonds or walnuts
    3 t Cinnamon
    4 T Canola or Coconut Oil
    1/4 to 1/3 C Water
    2 T Honey

Tips

The mixture won't be perfectly smooth or like liquid.
Wait for cheesecake to cool. Add fruit topping or other topping of choice. Store in the refrigerator. I normally top the cheesecake with a few sliced peach and eat it for breakfast.


Directions

Preheat over to 350 degrees.
Blend oats and nuts in a food processor. Mix oats, nuts, canola oil, water, 2 TBS honey, and 3 tsp cinnamon together for crust. Mash together in the bottom of pan.
Mash tofu into small crumbles. Mix all ingredients in a mixing bowl including tofu. Beat ingredients together with a mixer until smooth. Put mixture on top of crust in a 9 x 12 baking pan. Bake at 350 degrees for 20 minutes or until outside of cheesecake begins to brown.
