Introduction

Ingredients

    Cabbage, fresh, 1 cup, chopped
    Portabella Mushrooms, 100 grams
    Carrots, raw, 1 cup, chopped
    Peanuts, dry-roasted, .5 cup
    Olive Oil, 1 tbsp
    *Zuchinni fresh, 1 cup
    Ginger Root paste, 1 tsp
    *Hot Chili Peppers, 1 pepper finely chopped

    Salt and pepper to taste.


    I use 1 package of cole slaw mix, 1 package of shredded carrots, 1 package of pre-sliced baby bella mushrooms, etc. or any vegetable you have on hand.

    Just make sure if you are chopping one vegetable, chop all of the others as well, this will allow for the vegetables to cook evenly.

Tips

I can make this with all Indian spices (turmeric, garam masala, etc. or with coconut chutney mix). The flavor comes from the combination of spices used.

You can stuff the vegetables in half a Pita Pocket for lunch or snack anytime.

Peanuts can be substituted for pine nuts or water chestnuts (chopped).


Directions

In a pan, add olive oil and let it warm. Add everything else, mix, cover and let it steam on medium heat. Stir often until all vegetables are cooked. Let cook for another minute without the cover to dry of the water/steam.
