Ingredients

    1 can black beans, drained and rinsed well
    3/4 cup fresh or frozen corn kernels
    1 cup leftover cooked wild rice
    2 T roughly chopped raw onion
    1-3 cloves minced garlic
    2 T seasoned rice vinegar

Tips

This is one of those base recipes that you can use to clean out the fridge of leftovers. I like it simple, fresh, and icy cold. My husband prefers it warmed up with a kick of blackened seasoning.


Directions

Lightly onion and garlic over low heat until translucent and sweet. (use a touch of water in your non-stick pan to avoid adding oils)

Pop all the ingredients into a bowl with lid and gently shake until combined.
