1 pound fresh collards, cut into bite-sized pieces
1.5 cups chopped onion
1 cup sundried tomatoes, sliced into ribbons
0.5 to 1 cup chicken or vegetable broth
non-stick spray
Tips
Cooking the onions and tomatoes together give the onions a richer flavor. Also, begin with half cup of the chicken stock and add more liquid as needed.
Directions
Spray large skillet or dutch oven with non-stick spray. On a medium heat, saute onions and sundried tomatoes together, until onions are translucent. Add collards and chicken broth and mix well. Cover and cook on a medium heat until collards are tender.
