Ingredients

    4 even-sized cod fillets
    Salt and pepper
    1/3 cup unsalted butter, melted
    3/4 cup Panko-style gluten-free breadcrumbs (Earthfare)
    1 tsp. dry mustard
    1 tsp. onion salt
    Dash Worcestershire sauce and Tobasco
    2 tbsp. lemon juice
    1 tbsp. finely chopped parsley, fresh

Tips

Scrod is baby codfish.


Directions

1. Season the fish fillets with salt and pepper; place them on a broiler tray. Brush with butter and broil under high heat for about 5 minutes.
2. Combine remaining butter with bread crumbs, mustard, onion salt, Worcestershire sauce, Tobasco, lemon juice, and parsley.
3. Spoon the mixture carefully on top of each fillet, covering it completely. Press down lightly to pack the crumbs into place. Broil for another 5-7 minutes, or until the top is lightly browned and the fish flakes.

Serving Size: 1 fillet per serving = 4 servings
