Ingredients

    1 can pinto beans drained and rinsed
    1 6 inch sweet potato diced
    1 medium onion diced
    1 red pepper or poblano pepper diced
    6 oz shredded cheese, colby,jack, chedder
    2 cloves garlic, minced
    2 tsp olive oil
    salt, pepper, chili powder, cayenne
    12 Mission small carb balance whole wheat tortillas

Tips

This can serve 6 or 12 depending on your calorie count for day.
I served with cucumber slices and cantaloupe. Great on a hot day and very easy.
This is my twist on a recipe I saw on Oprah's website.


Directions

put onions and red/poblano pepper in med hi skillet on stove top and cook until slightly carmelized.
Put 1 tsp of olive oil in bowl with sweet potato and mix.
Add sweet potato and garlic to skillet and saute 1 minute.
Add chili powder to taste and a dash of cayenne.
Put skillet into a 400 degree pre heated oven and cook 15 min until potatoes tender and browned.
turn off oven.
Add pinto beans and put back in hot oven for about 4 or 5 minutes.
spread cheese evenly on each tortilla.
Spread the skillet mixture among the 12 tortillas
serve
