Introduction

Ingredients

    1 TBSP Extra Virgin Olive Oil
    1 medium onion, chopped
    4 oz. boneless skinless chicken breast, or firm tofu
    1 cup broccoli*
    1 cup snap peas, chopped*
    *substitute your favorite veggies
    1/2 cup cooked brown rice
    2 green onions chopped
    1 TBS reduced sodium soy sauce (optional)
    4 TBS Newman's Own low fat Sesame ginger dressing

Directions

Saute onion in olive oil in large skillet or dutch oven. Add vegetables and cook 2-4 minutes. Add brown rice, soy sauce and sesame ginger dressing.

Cook until brown rice is heated through.

Makes 3 one cup servings
