Introduction
This is my version of Paella, adjusted to be vegetarian. This is my version of Paella, adjusted to be vegetarian.Number of Servings: 8
Ingredients

• 4 links veggie sausages, cut into 1/2-inch-thick slices
4 tbsp olive oil
• 1 large chopped onion
• 2 chopped bell pepper
• 2 tbsp bottled minced garlic
• 1 tbsp black pepper
• 1 teaspoon crushed saffron threads
• 1 1/2 cups brown rice, dry
• 1 cup water
• 1 teaspoon dried marjoram
• 2 (14 1/2-ounce) can organic diced tomatoes (un-drained)
• 2 cups veggie broth
Directions
DDice and brown "sausage" in 2 tbsp olive oil . Set aside.
Dice onions, add to remaining olive oil in a hot pot. Brown, don't burn. Add garlic. Saute for 2 minutes.
Add mushrooms, zucchini, and peppers. Saute for another 3 - 5 minutes.
Add rice and veggie broth, water and tomatoes. Stir thoroughly. Simmer for about 10 minutes.
Add "sausage", simmer until rice absorbs all the liquid.
You can spice it up with some red pepper flakes if desired.
