Ingredients

Zucchini - 1 Cup Shredded
Red Onions - .25C Chopped Fine
Shallots - 2TB Chopped fine
Fresh grated ginger - to taste
Salt/Pepper
White or Whole Wheat Flour (about .25C or until mixture is of "pancake" batter consistency)
1 Egg
Also can add in Rice Vinegar and Sirracha to taste
Tips
Serve with a spicy peanut dipping sauce!
Serving size is for ONE fritter!
Directions
Mix all ingredients together.
Heat non-stick skillet or spray regular skillet with non stick spray.
Put about 2 spoonfuls of batter in pan for one fritter
Brown on both sides.
I stick mine in the oven while the others are cooking up.
If you don't mind the extra fat, you could fry in a bit of oil for a crispier fritter.
