Ingredients

    3 eggs
    1 cup sugar
    1/2 cup oil
    1 tsp. salt
    2 cups raw zucchini, unpeeled and grated
    2 tsps. vanilla
    2 cups flour
    1/4 tsp. baking powder
    2 tsp. baking soda
    1 tsp. cinnamon
    3/4 cup raisins

Tips

Raisins are included in the nutritional information. They add a little sweetness that can be lacking, without adding all the sugar and calories. Without the raisins, it's just as delicious and about 16 less calories.


Directions

Grate/shred raw, unpeeled zucchini. Recipe says chopped, but I couldn't find grated anywhere on-line, so I improvised. Use only 2 cups - 2-1/4 cups grated zucchini. Mix all ingredients together. Pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour. Each loaf provides apx. 12 slices, but the total ingredient listing would be for 24 servings.

Serving Size: Makes 2 loaves, apx. 12 slices per loaf. Or pour all into a 9 x 13 pan. Bake for apx. 40-45 minutes. Cool and cut into 24 squares.
