Ingredients

Thomas's Light Multi-Grain English Muffins
3 slices Muenster Cheese
6 large eggs, scrambled
Hillshire Farm Honey Ham, 6 oz (divided into 1-oz portions)
2 tbsp dried parsley, divided
black pepper, to taste
Tips
Also great with swiss and cheddar cheese... may use turkey bacon or a sausage patty (vegetarian??) instead of ham
Directions
pull muffins apart and lay on a foil-lined cookie sheet or cutting board. Place 1/2 slice of cheese and 1 ounce ham on each top half.
Scramble eggs (I find it easiest to do them in egg shaper thingies on the griddle...you know, the round things? Yeah...). As the first side cooks, sprinkle a little parsley and black pepper on the still-raw side. Flip and cook (don't make them too hard, or they'll be gross reheated). Remove when done and place on bottom half of muffin. Put halves together. Repeat for remaining muffins.
Allow to cool completely, then wrap each in foil, label, put in a ziploc freezer bag, and freeze (for up to 3 months). May also be refrigerated overnight for immediate use.
Fridge: heat 45 seconds-1 minute in microwave on power level 8.
Freezer: heat 90 seconds-2 minutes in microwave on power level 8.
