Ingredients

    -16 oz can Goya small red beans (do not drain)
    -2 tsp beef base
    -.5 chopped yellow onion
    -2 slices thick bacon (chopped)
    -1 medium yellow potato (peeled and chopped)
    -12 oz jar goya sofrito tomato cooking base
    -1 tsp pepper
    -1 tsp salt
    -2 tsp cumin
    -2 tbsp vegetable oil
    -.5 c water


    -1/4 c marsala cooking wine
    -3 packages Uncle Ben's Jasmine Ready Rice
    -.5 chopped yellow onion

Tips

I serve with my Puerto Rican pollo pinchos (chicken kabobs).


Directions

Combine beans, beef base, half of the onion, bacon, potato, tomato base, seasonings, vegetable oil, and water in a medium sauce pan. Bring to a boil and cook on low for 30 minutes (or until potatoes and bacon are cooked). Stir frequently.

Prepare the ready rice. Pour into a large sauce pan with the cooking wine and the other half of the onion. Add the bean mixture. Make sure it is mixed well and heated throughout.

Serving Size: Makes 9, 1 cup servings

    This was delicious. I had to make my own tomato base, since I couldn't find it. I used crushed tomatoes, garlic, onion, and Adobo. Turned out fantastic. The whole family loved it. - 4/28/21
