    2 cups fresh washed baby spinach
    3/4 cup fresh washed blueberries
    1/4 cup chopped pecans
    1 tbsp. real bacon bits
    2 Mini Babybel Light (laughing cow discs)


I used a mixture of balsamic vinegar and olive oil on my salad, but my husband enjoyed it with no dressing.


Wash and absorb excess water from the spinach and blueberries.
Layer ingredients in salad bowl(s), spinach first, then blueberries, then pecans, then bacon.
Open the laughing cow discs and slice them onto the salads. Serve with or without dressing.
