Introduction

This recipe is to be used on Cape Fear Pottery's exclusive mini bundt cake mold.
I modified it a bit to cut down some of the sugar.

Number of Servings: 12

Ingredients

    1/4 cup of coconut oil
    1/4 cup of sugar
    1 cup of gluten free multi-purpose flour
    1/2 tsp of Xanthan Gum (b/c I used GF flour)
    2 tbsp of low fat Buttermilk
    2 mashed bananas (the riper the better!!)
    1 egg
    1/4 tsp baking soda
    dash of salt
    1 tsp vanilla extract

Directions

Mix coconut oil and sugar together well in a mixing bowl.
Add egg, buttermilk, baking soda, salt, and vanilla extract.
Stir mixture well.
Add flour, banana.
Mix thoroughly until smooth.
Grease bundt pan and lightly flour or use a cooking spray.
PLACE BUNDT POTTERY PAN INTO COLD OVEN AND SET TEMP TO 350.
Bake for 45 min.

Serving Size: 12
