Ingredients

    Honeydew Melon, 50 grams, cubed
    Ginger, ground, 0.5 tsp
    Garlic, 2 clove, chopped
    Yellow Peppers (bell peppers), 0.5 pepper, large, chopped
    Olive Oil,2 tsp
    Honey, 2 tspn
    Cider Vinegar, 2 tbsp
    Jumbo King Prawns (frozen), 300 gram(s)
    Onions, raw, 25 grams,chopped
    Basil, 0.15 tbsp
    Chilli flakes, 1 tspn
    Salt and pepper to taste

Tips

Serve with basmati rice and a tropical side salad. Note: Nutritional information not included in this recipe.


Directions

1) In a pan stir-fry onions, garlic, ginger, peppers and chilliflakes for 3 minutes in the olive oil.
2) Add prawns, honey, vinegar, basil, salt and pepper.
3) Stir-fry for 5 minutes over medium heat.
4) Add honeydew melon and simmer for 20 minutes or till most of the liquid has evaporated. Please note: The melon will disintegrate to form a sauce.

    Reduce chilli to 1 tsp. Add, say, sweetcorn. Add further melon to increase sauce. If need be use yoghurt to reduce spiciness - otherwise very good. - 10/10/13
