Ingredients

    1 pkg chicken breast cut into bite size pieces
    1.5 cups sliced mushrooms
    2 cups white jasmine rice (measurement before cooking)
    2 cans cream of mushroom soup
    1 cup shredded mozzarella cheese
    salt and pepper
    oregano
    basil
    parsley
    garlic powder

Directions

Preheat oven to 450 degrees
Cook 2 cups of white rice
In a baking dish arranged chicken pieces and mushroom slices. Season with salt, pepper, oregano, basil, parsley, and garlic powder.
Sprinkle cheese evenly on top and then pour cream of mushroom soup over everything.
Top off with cooked rice and cover with aluminum foil before placing in oven.
Cook for 35 min covered and the last 5 uncovered to allow rice on top to crisp slightly.
Let stand for 15-20 min before serving to allow chicken to reabsorb juices.

Can be served with a side vegetable or garden salad to balance your meal.
