Introduction

I needed to punch up my dry coleslaw for the MRC diet, which requires low carbs, cals and fat. I found that vegan mayo has the least of these offenders, the rest of the ingredients are low naturally. Ingredients

    1 16-ounce bag of Coleslaw
    1/2 cup vegan mayonnaise (I like Spectrum)
    2 tbs apple cider vinegar
    2 tbs artificial sweetner (I like Truvia)
    1 tbs mustard

Directions

Mix mayonnaise, vinegar, mustard and sweetener thoroughly in a large bowl. Add ready-made coleslaw and mix well. Eat immediately or chill in the refrigerator.

Serving Size: Makes five 1.5 cup servings
