Ingredients

6 ounces beef tenderloin
1/8 tsp salt
1/4 tsp pepper
1 1/2 tsp. green onion, chopped
1 1/2 dijon mustard
10 baby carrots
2 Tbsp orange juice
1/8 tsp ginger, ground
1 dinner roll wheat
1 tomato
italian dressing 1 tbsp
apple 1 medium
Directions
Preheat broiler. Spray a broiler-pan rack with non-stick cooking spray
Trim any fat from the steak. Season with salt and pepper.
Wash onion and mince bulb finely, set aside. Mix together the mustard and onion
Place the steak on the broiler pan rack broil 5 to 6 inches from heat 4 to 5 minutes.
Spread the top side with half the mustard- onion mixture and broil for and other 2 minutes
Turn the steak over and broil for 4 to 5 minutes.
Spread the remaining mixture and broil for 2 more minutes or until desired doness
Let rest for 5 minutes before slicing and serving.
While steak is cooking, Prepare carrots, Steam carrots in orange juice. Sprinkle with ginger before serving.
Serve with a whole wheat roll, and frest tomato salad. Wash tomato and slice tomato drizzle with dressing. Sprinke with pepper if desired.
