Ingredients

    1 cup Oats
    1/4 cup Splenda
    1/4 cup Brown sugar splenda blend
    1 Egg
    1 Tbsp Honey
    1/2 tsp Cinnamon
    1/4 tsp ginger, ground
    1/4 tsp pumpkin pie spice
    1/4 c dried Cranberries, chopped fine
    1/4 c walnuts, chopped
    1 tsp. orange flavoring

Tips

Watch carefully while the cookies bake. At 6 minutes the cookies will be softer, but longer cooking times turn the mix into something closer to granola.

(Careful not to add flavoring directly into the egg directly it will cook the beaten egg.)


Directions

Preheat oven to 350 degrees. Combine beaten egg, sugar, extract, honey and spices in a large bowl. Mix in all other ingredients together. Spoon onto a cookie sheet coated with nonstick spray. Bake for 6-8 minutes until lightly brown.

Serving Size: 1 tablespoonful drop makes about 15 cookies
