Ingredients

    16 oz smoked sausage, diced
    80-100 oz water
    3 stalks celery chopped
    1 small onion, chopped
    1 cup frozen peas
    8-10 baby carrots, chopped
    200 grams red potatoes
    1-2 bay leaves

    season to taste
    (I use garlic pepper and whatever else strikes my fancy on any given day. The veggies that go in vary as well, depending on what I have on hand and my mood)

Tips

Cut the sausage into small pieces so they spread more evenly in each bowl of soup.


Directions

Add sausage to the water along with bay leaf and seasonings. Add onion. Add carrots and potatoes first as they will take longer to cook. After they are about half cooked add the celery. Add the peas last. Simmer till veggies are cooked through.

I do not have exact cooking times. I have always done this by sight and taste. I had to guesstimate ingredients as well. So adjust them to your own preferences. I typically use chicken bouillon but it is extremely high in sodium so I left it out of this recipe.

Serving Size: Makes 10 or more serving with 1 cup of liquid
