Ingredients

9 0z. Atlantic Salmon
2 cups sliced portabello mushrooms
1 cup chopped sweet red pepper
1/2 white onion chopped
1/2 cup raw carrots chopped
1 large raw potato, chopped
4 Tbsp shed spread
1/8 cup all purpose flour
12 ounces light soy milk
1 pillsbury 9: pie shell
Directions
cook salmon for 5 minutes in skillet coated with vegetable cooking spray. set aside.
Saute vegetables in olive oil until tender. set aside.
melt shed spread in skillet. blend in flour, add milk until slightly thickened. Add all ingredients to casserole dish and top with pie crust. Bake at 375 until crust is brown.
