Ingredients

    2 Tbsp butter, unsalted
    1 med summer squash, sliced
    1 med zucchini, sliced
    3 med mushrooms, sliced
    2 stalks scallions, chopped

Tips

Simple and healthy. I love butter, so I use more than most recipes call for, adjust to your liking.


Directions

Heat butter in skillet over medium heat, add squash and zuchhini, saute until slightly soft, add mushrooms and scallions, saute a little longer until mushrooms begin to wilt. Salt and pepper to taste.

Serving Size: makes 2 large helpings
