Ingredients

    1 pound zucchini
    12 oz. ground beef
    .25 cups chopped onion
    .25 cups chopped celery
    .5 cups chopped sweet peppers
    .5 cups sliced mushroom
    2 large tomatoes, chopped
    2 tsp lemon juice (.5 lemon)
    1 cup quinoa

Tips

Other seasonings may be added, such as Italian seasoning or chili powder.


Directions

Cut a 1 pound zucchini in half lengthwise. Use a spoon to scoop out the seed core, which can be chopped and added to vegetable mixture. Cut the zucchini into 6 pieces, placing them into a round casserole dish. In a large skillet, crumble-fry ground beef. As it cooks, add the vegetables, all chopped, including tomatoes and zucchini core. Add lemon juice and quinoa and mix. Salt and pepper may be added to taste. When mixture is heated through, pour over zucchini pieces. Sprinkle with grated cheddar cheese. Cook in microwave at HIGH for 15 minutes or in the oven at 350F. For 45 minutes.
