Ingredients

2 C oatmeal
4 C low fat milk
1 C pumpkin puree (canned if fresh is not available)
1 t pumpkin pie spice (or cinnamon)
2 t honey
Optional toppings:
chopped walnuts
almonds
pumpkin seeds
peanut butter
raisins
dates
cranberries
raw, shredded apple or carrot
Tips
Our family cooks large batches of this and we eat it for breakfast most mornings. We measure out a 1/2 C serving and microwave on high for 45-60 seconds.
Directions
Stir the oats, milk, pumpkin puree, and pumpkin pie spice together in a large saucepan. Bring the mixture to a gentle boil.
Reduce the heat and let it simmer for 5 minutes (or longer depending on personal tastes) mixing regularly to avoid "caking" on the bottom of the saucepan.
Serve or store for later consumption.
Experiment with optional toppings to augment the texture and flavors to your taste.
