Ingredients



    Lentils, 2 cup
    Turkey Bacon, 4 serving
    *Del Monte Petite Cut Diced Tomatoes, 2 cup
    Garlic, 3 cloves
    Carrots, 3 medium
    Shallots, 1 tbsp chopped
    Olive Oil, 2 tbsp (
    Celery, raw, 4 stalk, medium (7-1/2" - 8" long)
    Onions, raw, 1 medium (2-1/2" dia)
    *Balsamic Vinegar, 3 tbsp
    8 cups water

Directions

Saute the veges for about 5 to 10 minutes in the oil, then add the rest of the ingredients and water and bring to a boil. Reduce heat and cook for 45-60 minutes or until lentils are soft. Add salt to taste and balsamic vinegar at the end.

Serving Size: 1 cup. Makes about 11 servings
