Ingredients

    1 can Black Beans-drained
    1 can Corn-drained
    1 can Ro-tel diced tomatoes-drained
    1 envelope taco seasoning
    The juice of 2 limes
    4 Boneless, Skinless Chicken Breasts

Tips

I found that 7-8 hours on low work better for this recipe. The chicken will look black and burned, but that is just the spices. This recipe is spicy with the Ro-tel tomatoes. If you like it mild, just sub the Ro-tel with other diced tomatoes.


Directions

Drain the black beans, corn and tomatoes and dump them in the crockpot. Pour the lime juice over the mixture. Take half the taco seasoning and pour it over the mixture and stir with a spoon. Place the 4 chicken breasts on top of bean mixture and sprinkle with remaining taco seasoning. Cook for 6-8 hours on low.
