Ingredients

    1/2 cup coconut milk*
    1/2 cup soy milk
    1/2 tsp vanilla extract
    1/4 cup brown sugar
    1/4 cup unsweetened cocoa

Directions

1. Hours before preparing the mixture, put a can of coconut milk in the refrigerator. This will solidify it.

2. Add about 1/2 cup of the solidified "coconut cream" with a bit of the liquid to a mixing bowl (preferably metal). Add the rest of the ingredients and blend by hand. Then mix with a whisk (or whisk attachment) until smooth (but not firm).

3. Cover the bowl with plastic wrap and store in the refrigerator 1-2 hours.

4. Prepare in your ice cream maker according to the manufacturer's instructions. Dish into four containers and store in the freezer.

Serving Size: Makes 4 servings, each between half and a full cup
