Ingredients

    4 eggs
    1/4 cup coconut flour
    1/4 cup coconut milk (full fat, NOT 'light')
    1 Tbsp. honey
    1/4 tsp. vanilla
    1 pinch nutmeg
    1 pinch cinnamon (1/4 tsp. at least)

Tips

Very good! Texture is lighter than pancakes made with denser almond flour and almond butter.


Directions

Mix ingredients and let them sit for at least 5 minutes (10-15 minutes is even better; flour lumps soften and will disappear when whisked). Oil/ grease pan [electric skillet or griddle works well] with coconut oil; heat over medium heat (325 -350 in electric skillet). Pour scant 1/4 cup of batter for each crepe; allow to set/ brown before flipping.

Serving Size: 6 crepes, about 4-5 inches in diameter
