Quick and easy and very good Etouffee recipe tweaked for the Zone. A purist would insist on starting with a roux etc, but I like this method just fine. Ingredients

Campbell's 98% Fat Free Cream of Mushroom Soup, 1 Can
Campbell's Cream of Onion Soup, 1 Can
Campbell's 98% Fat Free Cream of Celery Soup, 1 Can
Crawfish tails, 24 oz.
Onions, raw, 1 medium
Green Peppers (bell peppers), 2, chopped
Celery, raw, 4 stalks
Rotel Original Diced Tomatoes & Green Chiles, 1 Can
White Rice, long grain, 2 cup
Butter, salted, 2 tbsp
Tips
Serving Size: 5 - 4 Block Bowls
Serve over 1/5 of Rice and Season with Creole Seasoning to taste.
Directions
Cook Rice (a rice cooker works great, the Etouffee is usually done about the same time as the rice)
Saute Onions and Celery with butter in large pan until onions are clear. Add bell peppers and cook to desired tenderness. (Adding small amounts of water may be necessary to finish softening vegetables.)
Reduce heat to medium and mix in soups, Rotel and Crawfish tails.
Continue to heat, stirring frequently until Etoufee is hot.
