Introduction

Haven't tried it yet. I had it in the slow cooker last night for dinner tonight. I had to tweak the original recipe just a bit. Haven't tried it yet. I had it in the slow cooker last night for dinner tonight. I had to tweak the original recipe just a bit.

Ingredients

    Chicken Thigh, 2 unit (yield from 1 lb ready-to-cook
    Yellow Sweet Corn, Frozen, 2 cup kernels
    Beans, black, 1.5 cup
    *Diced Tomatoes & Green Chilies (canned) 2.5 srv - Rotel, 2.5 serving
    Swanson Chicken Broth 99% Fat Free, 1.5 cup
    *Onion powder, 1 tbsp
    *Cumin seed, 1 tbsp
    Chipotle pepper seasoning, 1 tsp

Directions

De bone chicken thighs (or use breasts)
Add all ingredients into slow cooker
Cook on low for 9 hours or high for 6 hours
Shred chicken with forks
Cook for 1 additional hour on low or half hour on high

Serve over rice or on tortilla

Serving Size: Makes 8 servings
