    1 1/2 cups flour
    1 cup sugar
    3 tbsp cocoa powder
    1 tsp baking soda
    1/2 tsp salt
    1/3 cup olive oil (or vegetable or canola)
    1 tbsp white or cider vinegar
    1 tsp vanilla
    1 cup cold water
    Optional powered sugar for dusting


If you made cake, serve in pan cooked in or use extreme care in removing from pan as cake is very tender. Serves 9 if cake and 12 if cupcakes. This is a vegan cake.


Preheat oven to 350 degrees. Lightly spray 9 inch round cake pan or 12 cup muffin pan (I use baking cups in each muffin hole). In mixing bowl sift tgether flour, sugar, cocoa powder & baking soda. When finished make 3 wells in the dry ingredients. Pour vanilla in one, second well pour vinegar and third well pour in oil. Pour cold water over everything and stir until moist. Bake 30-35 minutes (20 minutes if cupcakes) or cake or cupcakes spring back or stick in toothpick & it should come out clean. Remove from oven, let cool, dust with powdered sugar if desired.

Serving Size: Makes 12 cupcakes or one 9 inch round cake
