Ingredients

95g (or about 2/3 cup) flour
1 tsp baking powder
pinch of baking soda
1/3 tsp salt
splash of vinegar
1/4 cup (60g) soy milk (or similar)
20g Earth Balance spread or similar (shortening would work), about 1 Tbsp and 1 tsp.
Directions
Preheat oven to 450F
Mix dry ingredients. Cut in 'fat' (Earth Balance, margarine, shortening ...) with a fork until crumbly.
Separately combine soy milk and vinegar (about 1/2 tsp), stir, and let sit a few minutes.
Stir wet and dry ingredients together until a single clump of dough forms. Turn out on a lightly floured surface and knead about 10 times, or 30 seconds. Roll out until about 1/2" thick. Cut with cookie cutter or knife into 5 biscuits (make four, and use the remainder of the dough for the 5th ...).
Place on a baking/cookie sheet, at least 1/2" apart and bake 12-15 minutes or until they begin to brown.
