Ingredients

    Yellow Sweet Corn, Canned, 1.5 cup (about 1 can, drained)
    Beans, black, 3 cups (2 cans, drained)
    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Scallions, raw, .33 cup, chopped
    *Extra Virgin Olive Oil, 2 tbsp
    Pepper, red or cayenne, 1 tsp
    Lime Juice, .25 cup(fresh!)
    Cilantro, raw, 6 tbsp
    Garlic, 2 tsp(remove)
    Flour Tortillas, 8 tortillas (approx 10" dia)
    salt, chili powder and roasted paprika (to taste)

Directions

Mix together all ingredients and season to taste with salt, chili powder and roasted paprika. Refrigerate for at least 30 minutes. Spoon about 3/4 c into a tortilla, fold and eat!
