Ingredients

    1 package egg roll wrappers
    1 15 oz. can red kidney beans
    1 15 oz can corn
    1 6 oz can mushrooms
    1 12-16 oz. jar salsa
    3 oz low fat shredded cheddar

Tips

To make this vegetarian or vegan, substitute 1 cup reconstituted TVP and vegan cheese.


Directions

Preheat oven to 425 degrees. Brown turkey, drain. Drain all vegetables. Mix all ingredients together.
Scoop 1/4 Cup of mixture into each wrapper. Roll, wet end with water. Spray pan with non-stick spray. lay egg rolls in pan and spray the top of them. bake for 10-15 minutes until browned, turn over and bake another 10-12 minutes.

Serving Size: Makes 24 egg rolls, 3 per serving
