Introduction

I just came up with this on the fly to serve as a side dish. I just came up with this on the fly to serve as a side dish.
Number of Servings: 6

Ingredients

    1 box of Rozoni Smart Taste Rotini Pasta
    2 - 4oz. cans of mushrooms
    6 oz Cherry Tomatoes
    4 cups fresh spinach
    4 oz Feta Cheese
    2 large Zucchini sliced into circles
    1 Tbsp Basil
    1 Tbsp Oregano
    1 Tbsp Tarragon
    1 Tbsp Thyme
    2 Garlic Cloves minced

Tips

You can add chicken or beef and make this a main course.


Directions

Cook pasta according to directions.
While pasta cooks, spray large skillet with cooking spray, heat over medium heat and add garlic. Sauté for about 2 minutes, add zucchini and herbs. Cook until zucchini is beginning to brown. Toss in tomatoes, mushrooms, and spinach. Reduce to a simmer. Add cheese and pasta when done. Toss until cheese disappears. It's ready!
