Ingredients

    1 pound of raw shrimp, shelled and deveined
    3/4 cup unsweetened shredded coconut
    2 egg whites
    1/2 teaspoon salt
    1 tablespoon coconut oil

Directions

Peel and remove the tails of the shrimp. Pulse in a food processor and pulse until shrimp is almost like mush. In a large bowl whisk egg whites, then add shrimp, coconut, and salt. Form the batter into 8 patties, each about 1/2 inch thick. Heat coconut oil in a skillet over medium heat. Cook 4 patties at a time, until golden and cooked all the way through. Serve with steamed asparagus.
