Number of Servings: 10

Ingredients

    1 Whole Chicken or 6 Thighs
    1 Jar of Pasta sauce
    3 Peppers (any color, I use a pack of tri color to save some $)
    1 Sweet Onion
    2 Tbsp of Paprika
    2 Cloves of Garlic (or a good squirt of pureed)
    1 Tbsp of Cumin
    1 Tsp of Crushed Red Pepper Flakes
    1 8 oz Tub of Fat Free Sour Cream
    Salt and Pepper to taste

    **1/2 cup of red wine, optional

Tips

I've had it over pasta, rice and just as a stew-oup.
This recipe also freezes well.


Directions

Salt and pepper your chicken.
Cut the peppers and onions into chunks and place on the bottom of your crock pot.
Put FRESH OR FROZEN chicken on top of the veggies and cover with pasta sauce, paprika, cumin and garlic.**Add wine if you like.
Set the crock pot for 7-8 hours on low or half the time on high.
Remove chicken and shred with a fork or by hand.
Add sour cream and blend the veg/tomato broth with an immersion blender.
Put chicken back in and serve as you like.

Serving Size: Makes 10 to 12 servings
