Ingredients

    2 Lbs raw, peeled shrimp
    1/4 C olive oil
    1 med tomato chopped
    1 med onion chopped
    red pepper to taste
    1/4 C water
    1 T ginger
    2 tsp curry powder
    2 T chopped celantro leaves
    2/3 tsp salt
    1 T dry sherry or garam masala

Tips

Serve over basmati rice.


Directions

Stirfry onion in oil
Add remaining ingredients. Simmer until shrimp is opaque.
