Ingredients

    2 cups chopped strawberries
    1-3/4 cup full fat coconut milk
    1/4 cup sugar
    1/2 cup half and half

Tips

The ice cream will be less creamy than if it was prepared in an ice cream maker. If there are left overs, remove from freezer at least 5 minutes before serving and stir well.


Directions

Heat coconut milk and half an half in a saucepan over medium high until hot (bring to a low boil). Add sugar and stir to dissolve. Remove from heat.

Cool for 1-2 minutes and then pour into a blender along with the fruit. Blend until fully pureed. Cool 10 minutes then pour into a large container.

Place in the freezer and stir with a spoon every hour for roughly 8-10 hours.
