Taste-tested this at a local health food market, and was in LOVE! When I tasted this amazing veggie soup I subscribed to Cooking Light, after discovering it was the source. Taste-tested this at a local health food market, and was in LOVE! When I tasted this amazing veggie soup I subscribed to Cooking Light, after discovering it was the source.

Ingredients

    1-2 heads of caulifower (appx 4-5 cups)
    2 c chopped onion
    2-4 tbs butter
    3 large chopped potatoes
    1/2 cup chopped carrots
    8 cups chicken broth (calculated with 99% fat free)
    1 tsp Pepper

Tips

Suggested to be served with blue cheese - not calculated.


Directions

Melt 2-4 T butter in large stock pot. Add onion and brown.

Chop potatoes, carrots and cauliflower into small pieces (smaller than stir fry size). Add to pot and cook until cauliflower starts to brown.

Add broth, boil. Add pepper, reduce to simmer and cook untnil veggies are tender.

Serving Size: Makes 7-10 servings depending on size. Calculated at 7
