12 slices bread (cut in 1 inch cubes, and split)
    16 oz Neufchatel Cheese
    2 cups blueberries (split)
    12 eggs beaten
    2 cups milk
1/3 cup sugar free maple sugar
    1 tsp vanilla
    1/8 tsp cinnamon
    1 cup water
    2 tablespoons cornstarch
    1 cup Splenda
    1 tbs butter

1. Grease 9x13 pan. Cover bottom of pan with half the bread. Using a spoon, dollop the cheese across the bread. Sprinkle 1 cup of the blueberries on top. Cover with rest of the bread.

2. In a large bowl: mix the eggs, milk, syrup, vanilla and cinnamon. Pour mixture over the bread pan. Cover and refrigerate overnight.

3. Take out of fridge 30 minutes before baking. Preheat oven to 350.

4. Bake covered for 30 minutes. Uncover then bake for another 25-30 minutes. Will be firm in middle and slightly browned.

5. Make sauce: Mix water, cornstarch and splenda in small pan. Bring to boil, cook for 3-4 minutes, stirring constantly. Add blueberries, lower heat, simmer 10 minutes allowing blueberries to burst, stir occasionally.
