Ingredients

1 onion (chopped small)
2 carrots (peels, cut into rounds)
1 celery stalk (cut small)
4 cups vegetable broth
1 cup of lentils (not cooked)
1/4 tsp thyme
1/4 tsp pepper
salt to taste
1 bay leaf
1 tbs lemon juice
Tips
you are suppose to sautee the onion, carrot, and celery in oil before adding everything-- but thats a lot of calories. I find that using a little of the broth is just fine, then adding everything.
Directions
cut the onion, carrot, and celery.
Put broth in pot
add onion, carrot, celery, lentils, spices, bay leaf
heat to boil, turn down, put on lid, simmer for 45 min or medium/low
remove bayleaf, add lemon juice, serve!
