Ingredients

    2 La Tortilla Factory Whole Wheat Low Carb/Low Fat Tortilla, Large Size
    1 slice fat-free cheddar cheese, cut in half
    2/3 C. enchilada sauce
    1 6-7 oz. boneless, skinless chicken breast, cubed
    1/3 C. fat-free refried beans
    1/4 C. shredded fat-free cheddar cheese
    1/4 C. chopped onion
    1 Tblsp. taco sauce
    1/2 tsp. taco seasoning mix, dry
    2 scallions, chopped

Directions

Preheat oven to 400 degrees. In a pan sprayed with nonstick spray, cook onions and chicken over medium heat until chicken is cooked through and onions begin to brown. In a small dish, combine the chicken and onions with the refried beans, taco sauce, and taco seasoning. Mix well. Spray a small baking dish with nonstick spray. Heat tortillas in the microwave until slightly warm. Lay the tortillas on a clean, dry surface, and then spread about 2 Tblsp. of the enchilada sauce onto each one. Place one half of the cheese slice on each tortilla. Then, evenly distribute the chicken/bean mixture into the center of each tortilla. Wrap the tortillas up tightly, and place them in the baking dish seam side down. Pour the rest of the enchilada sauce over the enchiladas. Bake in the oven for about 10 minutes (until the enchiladas are hot). Remove dish from the oven, sprinkle shredded cheese over the enchiladas, and then return it to the oven for about 5 minutes (until the cheese is nice and melty). Top with chopped scallions.

    We decided to try it for dinner, I used black beans and added diced green chilis, I also simply used cumin to cut down on the sodium. It was a very big hit! all 4 kids loved it! Thanks for sharing! - 11/8/08

    This was awesome & my 2 guys (who don't like it when I cook healthy) even liked it. I didn't use as much cheese & added a little f.f. sour cream to the inside mixture. Will DEFINITELY make again. Thanks! - 3/8/08
